Ingredients:

  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1/4 cup diced pickles
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • Salt and pepper, to taste
  • 12 egg roll wrappers
  • Cooking spray

Instructions:

  1. In a skillet over medium heat, cook the ground beef until browned and cooked through. Drain any excess fat.
  2. In a large bowl, combine the cooked ground beef, shredded cheddar cheese, diced onions, diced tomatoes, diced pickles, ketchup, mustard, salt, and pepper. Mix until well combined.
  3. Place an egg roll wrapper on a clean surface in a diamond shape. Spoon about 2-3 tablespoons of the cheeseburger mixture onto the center of the wrapper.
  4. Fold the bottom corner of the wrapper over the filling, then fold in the side corners. Roll tightly towards the top corner, sealing the edges with a bit of water.
  5. Repeat with the remaining wrappers and filling.
  6. Preheat your air fryer to 375°F (190°C).
  7. Lightly spray the egg rolls with cooking spray.
  8. Place the egg rolls in the air fryer basket in a single layer, making sure they are not touching.
  9. Cook for 8-10 minutes, or until the egg rolls are golden brown and crispy, flipping halfway through cooking.
