Ingredients

  • 4 medium-sized russet or Yukon gold potatoes
  • 3 tablespoons olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried rosemary (or your favorite herb)
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Potatoes:
  • Wash and scrub the potatoes thoroughly. Pat them dry with a kitchen towel.
  • Place each potato between two chopsticks or wooden spoons to prevent cutting all the way through. Slice the potatoes thinly (about 1/8 inch apart), stopping when your knife hits the chopsticks or spoons.
  1. Season the Potatoes:
  • In a small bowl, mix the olive oil (or melted butter), minced garlic, salt, pepper, and rosemary.
  • Brush the garlic-herb mixture generously over the potatoes, making sure to get some in between the slices.
  1. Preheat the Air Fryer:
  • Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  1. Cook the Potatoes:
  • Place the prepared potatoes in the air fryer basket. Make sure they are not overcrowded to allow even cooking.
  • Air fry the potatoes at 350°F (175°C) for 25-30 minutes, checking halfway through to brush more of the garlic-herb mixture over the top. Continue cooking until the potatoes are crispy on the edges and tender inside.
