Ingredients

  • 6-8 medium-sized apples (Granny Smith or Honeycrisp work well)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter
  • 1 package (2 crusts) pre-made pie dough (or homemade if preferred)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare the Apples:
  • Peel, core, and slice the apples into 1/4-inch thick slices.
  • In a large bowl, combine the apple slices with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, and flour. Toss until the apples are evenly coated. Set aside for about 30 minutes to allow the apples to release their juices.
  1. Preheat the Oven:
  • Preheat your oven to 425°F (220°C).
  1. Prepare the Pie Crust:
  • Roll out one of the pie doughs on a lightly floured surface to fit your 9-inch pie dish. Carefully transfer the dough to the pie dish, allowing the excess to hang over the edges.
  1. Fill the Pie:
  • Pour the apple mixture into the prepared pie crust, spreading it out evenly.
  • Dot the apples with small pieces of unsalted butter.
  1. Top Crust:
  • Roll out the second pie dough and place it over the apples. Trim the excess dough, leaving about a 1-inch overhang. Fold the overhang under the bottom crust and crimp the edges to seal.
  • Cut a few slits in the top crust to allow steam to escape during baking.
  1. Egg Wash:
  • In a small bowl, beat the egg with the milk. Brush the egg wash over the top crust for a golden finish.
  1. Bake the Pie:
  • Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

  • Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling set and makes it easier to slice.
