Baileys Truffles Recipe

Indulge in these rich and creamy Baileys truffles, a perfect blend of chocolate and Irish cream liqueur. These decadent treats are ideal for special occasions or as a luxurious homemade gift.


  • 200g (7 oz) dark chocolate, finely chopped
  • 100ml (3.4 fl oz) Baileys Irish Cream
  • 50g (1.7 oz) unsalted butter, cut into small pieces
  • 100g (3.5 oz) heavy cream
  • Cocoa powder, for coating
  • Optional: finely chopped nuts or chocolate sprinkles for coating


  1. Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
  2. Melt the Chocolate: Place the chopped dark chocolate and butter in a heatproof bowl. Pour the hot cream over the chocolate and butter. Let it sit for a minute to melt the chocolate.
  3. Mix: Stir the mixture until smooth and fully combined. If the chocolate hasn’t melted completely, you can microwave it in 10-second intervals, stirring in between, until smooth.
  4. Add Baileys: Stir in the Baileys Irish Cream until fully incorporated.
  5. Chill: Cover the mixture with plastic wrap and refrigerate for at least 2 hours, or until firm enough to scoop.
  6. Form Truffles: Using a melon baller or a teaspoon, scoop out small portions of the chocolate mixture and roll them into balls between your palms.
  7. Coat Truffles: Roll each truffle in cocoa powder, or if desired, in finely chopped nuts or chocolate sprinkles.
  8. Chill Again: Place the coated truffles on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.

Serve chilled or at room temperature. Store the truffles in an airtight container in the refrigerator for up to two weeks.
