Baked Leche Flan Recipe

Leche Flan is a rich and creamy Filipino dessert similar to a caramel custard. This baked version is smooth and silky with a delicious caramel topping.


For the Caramel:

  • 1 cup white sugar
  • 1/4 cup water

For the Flan:

  • 10 egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup whole milk (optional, for a lighter texture)


  1. Prepare the Caramel:
  • In a saucepan over medium heat, combine the sugar and water.
  • Stir until the sugar is dissolved, then let it boil without stirring until it turns into a golden brown caramel.
  • Quickly pour the caramel into a flan mold or a round baking pan, tilting the mold to evenly coat the bottom. Set aside to cool and harden.
  1. Prepare the Flan Mixture:
  • In a large mixing bowl, gently whisk the egg yolks until well combined. Avoid creating too many bubbles.
  • Add the sweetened condensed milk, evaporated milk, vanilla extract, and whole milk (if using). Mix gently until all ingredients are well incorporated.
  1. Assemble and Bake:
  • Preheat your oven to 350°F (175°C).
  • Pour the flan mixture over the hardened caramel in the mold.
  • Cover the mold with aluminum foil to prevent the flan from browning too much.
  • Place the mold in a larger baking dish filled with about 1 to 2 inches of hot water (water bath) to ensure even baking.
  1. Bake the Flan:
  • Bake in the preheated oven for about 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
  • Remove the flan from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  1. Serve:
  • To unmold, run a thin knife around the edges of the flan.
  • Place a serving plate on top of the mold and quickly invert it to release the flan onto the plate.
  • The caramel will flow over the flan, creating a beautiful caramel sauce.
