Baked Potatoes Recipe

  • 4 large baking potatoes
  • 1 cup cooked rice (white or brown, whichever you prefer)
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste


  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean and pat them dry with paper towels.
  2. Use a fork to poke several holes all over each potato. This allows steam to escape during baking and prevents the potatoes from bursting.
  3. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

  8. Stuff each potato shell with the rice mixture, mounding it slightly on top.
  9. Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the filling is heated through and the cheese is melted and bubbly.
  10. Once done, remove the stuffed potatoes from the oven and let them cool for a few minutes before serving.
