Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (125g) cornstarch
  • 2 eggs, beaten
  • 1 cup (240ml) pineapple juice
  • 1/2 cup (120ml) ketchup
  • 1/4 cup (60ml) apple cider vinegar
  • 1/4 cup (60ml) low-sodium soy sauce
  • 1/4 cup (50g) brown sugar
  • 1 tablespoon (15ml) vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup (150g) pineapple chunks
  • Salt and pepper, to taste
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In separate bowls, place the beaten eggs and cornstarch. Dip the chicken pieces first into the cornstarch, then into the eggs, ensuring they are evenly coated. Place the coated chicken onto the prepared baking dish.
  3. Bake the chicken in the preheated oven for 20-25 minutes, or until cooked through and crispy.
  4. While the chicken is baking, prepare the sweet and sour sauce. In a saucepan, combine pineapple juice, ketchup, apple cider vinegar, soy sauce, and brown sugar. Stir well and bring to a simmer over medium heat. Allow the sauce to thicken slightly, stirring occasionally, for about 5-7 minutes.
  5. In a separate pan, heat vegetable oil over medium heat. Add diced bell pepper and onion, and sauté until they are tender-crisp.
  6. Once the chicken is done baking, remove it from the oven and transfer it to a large bowl. Add the sautéed bell pepper and onion, along with pineapple chunks. Pour the prepared sweet and sour sauce over the chicken mixture and toss until everything is well coated.
  7. Return the coated chicken mixture to the baking dish and bake for an additional 10-15 minutes, allowing the flavors to meld together.
  8. Serve the baked sweet and sour chicken hot, garnished with sesame seeds and chopped green onions if desired. Enjoy with steamed rice or your favorite side dish!

This healthier baked version of sweet and sour chicken is a crowd-pleaser, perfect for busy weeknights or weekend dinners with the family.
