Baked Sweet and Sour Chicken

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil

For the Sweet and Sour Sauce:

  • 1 cup granulated sugar
  • 1/2 cup distilled white vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

  1. Preheat the Oven:
    • Preheat your oven to 325°F (165°C).
  2. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Cut the chicken into bite-sized pieces.
  3. Coat the Chicken:
    • Place the cornstarch in a shallow bowl.
    • Beat the eggs in another shallow bowl.
    • Dip each piece of chicken into the cornstarch, coating thoroughly, and then dip into the beaten eggs.
  4. Brown the Chicken:
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Add the coated chicken pieces in batches, browning them quickly on all sides. They do not need to be cooked through at this stage.
    • Transfer the browned chicken pieces to a 9×13-inch baking dish.
  5. Prepare the Sweet and Sour Sauce:
    • In a medium bowl, whisk together the sugar, vinegar, ketchup, soy sauce, garlic powder, and salt until well combined.
  6. Bake the Chicken:
    • Pour the sweet and sour sauce evenly over the chicken in the baking dish.
    • Bake in the preheated oven for 1 hour. Every 15 minutes, stir the chicken to ensure it is well coated with the sauce and to prevent sticking.
  7. Serve:
    • Once baked, the chicken will be tender and coated in a thick, flavorful sauce. Serve hot over steamed rice or with your favorite vegetables.
