Balsamic Garlic Roasted Mushrooms Recipe

  • 1 lb (450 g) mushrooms, cleaned and trimmed (button, cremini, or baby portobello work well)
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Mushrooms: Place the cleaned and trimmed mushrooms in a large mixing bowl.
  3. Make the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, soy sauce, dried thyme, salt, and pepper.
  4. Marinate Mushrooms: Pour the marinade over the mushrooms. Toss until the mushrooms are evenly coated.
  5. Roast the Mushrooms: Spread the mushrooms in a single layer on a baking sheet lined with parchment paper or lightly greased.
  6. Bake: Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are tender and have released their juices.
  7. Serve: Transfer the roasted mushrooms to a serving dish, and if desired, sprinkle with fresh chopped parsley for garnish.
