Banana Cream Cheesecake Bars Recipe

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium bananas)

For the Banana Cream Layer:

  • 1 (3.4 oz) package instant banana pudding mix
  • 2 cups cold milk
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

For Topping:

  • Whipped cream (optional)
  • Banana slices (optional)
  • Graham cracker crumbs (optional)

  1. Prepare the Crust:
    1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving some overhang for easy removal.
    2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
    3. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer.
    4. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the cheesecake layer.
  2. Prepare the Cheesecake Layer:
    1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    2. Add the granulated sugar and continue to beat until well combined.
    3. Add the eggs, one at a time, beating well after each addition.
    4. Mix in the vanilla extract and mashed bananas until everything is well incorporated.
    5. Pour the cheesecake mixture over the cooled crust and spread it evenly.
    6. Bake in the preheated oven for 25-30 minutes, or until the center is set and the edges are lightly golden.
    7. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set completely.
  3. Prepare the Banana Cream Layer:
    1. In a medium bowl, whisk together the instant banana pudding mix and cold milk until thickened, about 2 minutes. Let it sit for a few minutes to further thicken.
    2. In a separate bowl, beat the heavy whipping cream with powdered sugar until stiff peaks form.
    3. Fold the whipped cream into the banana pudding until well combined.
    4. Spread the banana cream mixture evenly over the chilled cheesecake layer.
  4. Chill and Serve:
    1. Refrigerate the bars for at least 1 hour before serving to allow the banana cream layer to set.
    2. When ready to serve, lift the bars out of the baking dish using the parchment paper overhang and cut into squares.
    3. Top with whipped cream, banana slices, and graham cracker crumbs if desired.
