A deliciously crispy and savory dish, the Beef and Cheese Chimichanga is a deep-fried burrito filled with a hearty mixture of seasoned beef and melted cheese. Perfect for a satisfying meal, it’s sure to become a family favorite!

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Vegetable oil for frying
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro

  1. Cook the Beef:
    • In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until it’s no longer pink.
    • Add the chopped onion and minced garlic. Cook until the onion is soft and translucent.
  2. Season the Beef:
    • Stir in the ground cumin, chili powder, paprika, salt, and pepper. Cook for another 2-3 minutes until the spices are well incorporated. Remove from heat.
  3. Prepare the Chimichangas:
    • Lay a flour tortilla flat on a clean surface. Add a generous spoonful of the beef mixture in the center.
    • Sprinkle a mix of shredded cheddar and Monterey Jack cheese over the beef.
    • Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to the top to form a burrito shape. Secure with toothpicks if necessary.
  4. Fry the Chimichangas:
    • In a deep skillet, heat about 1-2 inches of vegetable oil over medium-high heat until hot (around 350°F/175°C).
    • Carefully place the chimichangas seam-side down in the oil. Fry in batches, turning occasionally, until golden brown and crispy on all sides, about 3-4 minutes per side.
    • Remove the chimichangas with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
  5. Serve:
    • Serve the chimichangas hot, topped with optional sour cream, guacamole, salsa, and chopped cilantro.

Enjoy your homemade Beef and Cheese Chimichangas, crispy on the outside and delightfully cheesy and flavorful on the inside!
