  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) red enchilada sauce
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: diced tomatoes, sliced black olives, sour cream, chopped cilantro


  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain excess fat from the skillet.
  3. Add the diced onion and minced garlic to the skillet with the cooked beef. Cook for 2-3 minutes until the onions are translucent and fragrant.
