Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) red enchilada sauce
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: diced tomatoes, sliced black olives, sour cream, chopped cilantro

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain excess fat from the skillet.
  3. Add the diced onion and minced garlic to the skillet with the cooked beef. Cook for 2-3 minutes until the onions are translucent and fragrant.
  4. Stir in the red enchilada sauce, diced green chilies, ground cumin, chili powder, salt, and pepper. Let the mixture simmer for 5 minutes, allowing the flavors to meld together. Remove from heat.
  5. Spoon a generous amount of the beef mixture onto each flour tortilla, then sprinkle with shredded cheese. Roll up the tortillas and place them seam-side down in the prepared baking dish.
  6. Pour any remaining enchilada sauce over the rolled tortillas, then sprinkle the remaining shredded cheese on top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.
  8. Remove the foil and bake for an additional 5 minutes, or until the cheese is golden brown and bubbly.
  9. Serve the beef enchiladas hot, garnished with your favorite toppings such as diced tomatoes, sliced black olives, sour cream, and chopped cilantro.

Enjoy your delicious homemade beef enchiladas!
