Ingredients

  • Beef Roast (Chuck or Rump): 3-4 pounds
  • Salt: 2 teaspoons
  • Black Pepper: 1 teaspoon
  • Olive Oil: 2 tablespoons
  • Garlic Cloves: 4, minced
  • Onion: 1 large, sliced
  • Carrots: 4, cut into chunks
  • Celery Stalks: 2, chopped
  • Potatoes: 4 medium, quartered
  • Beef Broth: 2 cups
  • Red Wine (optional): 1 cup
  • Tomato Paste: 2 tablespoons
  • Thyme: 1 teaspoon, dried or 2 sprigs fresh
  • Rosemary: 1 teaspoon, dried or 2 sprigs fresh
  • Bay Leaves: 2
  • Worcestershire Sauce: 2 tablespoons
  • Flour: 2 tablespoons (optional, for thickening gravy)
  • Fresh Parsley: For garnish

Instructions

  1. Prepare the Beef:
  • Season the beef roast generously with salt and black pepper on all sides.
  1. Sear the Beef:
  • In a large skillet or pot, heat the olive oil over medium-high heat.
  • Add the beef roast and sear it on all sides until browned. This helps to lock in the juices and adds flavor. Remove the beef and set aside.
  1. Sauté Aromatics:
  • In the same skillet, add the minced garlic and sliced onions. Sauté until they are fragrant and the onions are translucent.
  1. Add Vegetables:
  • Place the carrots, celery, and potatoes at the bottom of a slow cooker or a large oven-safe pot.
  • Add the sautéed garlic and onions on top of the vegetables.
  1. Combine Ingredients:
  • Place the seared beef roast on top of the vegetables.
  • Pour the beef broth and red wine (if using) over the roast.
  • Add the tomato paste, thyme, rosemary, bay leaves, and Worcestershire sauce.
  1. Cook the Roast:
  • Slow Cooker Method: Cover and cook on low for 8-9 hours or on high for 4-5 hours, until the beef is tender and easily shreddable.
  • Oven Method: Preheat the oven to 325°F (165°C). Cover the pot with a lid or foil and cook for about 3-4 hours, or until the beef is tender.
  1. Thicken the Gravy (Optional):
  • If you prefer a thicker gravy, remove the beef and vegetables from the pot.
  • In a small bowl, mix 2 tablespoons of flour with a bit of water to create a slurry.
  • Stir the slurry into the liquid in the pot and simmer until thickened.
  1. Serve:
  • Slice or shred the beef roast and serve it with the vegetables.
  • Spoon the gravy over the top.
  • Garnish with fresh parsley.

Enjoy your delicious and hearty beef roast pot!
