Rice and Beef Roast Pot Recipe

  • 2 lbs beef chuck roast, cut into large chunks
  • 2 cups long-grain white rice
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 cup water
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Fresh parsley, chopped (for garnish)


  1. Prepare the Beef:
  • Season the beef chunks with salt, pepper, paprika, thyme, and rosemary.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  • Brown the beef chunks on all sides, about 5-7 minutes. Remove the beef and set aside.
  1. Cook the Vegetables:
  • In the same pot, add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic, sliced carrots, celery, and bell pepper. Cook for another 5 minutes until the vegetables are slightly softened.

  • Return the browned beef chunks to the pot.
  • Add the beef broth, water, and bay leaves. Stir to combine.
