Beef Stew Recipe

A hearty and flavorful beef stew that’s perfect for a cozy dinner. This stew is packed with tender beef, vegetables, and a rich broth.


  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • 2 tbsp flour (optional, for thickening)


  1. Prepare the Beef: Season the beef cubes with salt and pepper.
  2. Brown the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, browning on all sides. Remove the beef and set aside.
  3. Cook the Vegetables: In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
  4. Deglaze the Pot: Pour in the red wine (if using) and scrape the bottom of the pot to release any browned bits. Let it simmer for a few minutes until the wine reduces by half.
  5. Add the Broth and Tomato Paste: Stir in the beef broth and tomato paste. Return the beef to the pot.
  6. Season and Simmer: Add the thyme, rosemary, bay leaves, carrots, potatoes, and celery. Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 1.5 to 2 hours, or until the beef is tender.
  7. Thicken the Stew: If you prefer a thicker stew, mix 2 tablespoons of flour with a bit of water to form a slurry. Stir the slurry into the stew and cook for an additional 10 minutes.
  8. Add the Peas: In the last 10 minutes of cooking, add the frozen peas.
  9. Season to Taste: Taste the stew and adjust the seasoning with salt and pepper if needed.
  10. Serve: Remove the bay leaves and serve the stew hot, garnished with fresh parsley if desired.
