Black Forest Cake Recipe

A classic German dessert, Black Forest Cake is a rich and decadent chocolate sponge cake layered with whipped cream and cherries, topped with chocolate shavings for an elegant finish.

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Cherry Filling:

  • 1 cup pitted fresh or canned dark cherries
  • ½ cup cherry juice (reserved from the canned cherries or cherry liqueur)
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar (optional, depending on the sweetness of the cherries)

For the Whipped Cream:

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Decoration:

  • Chocolate shavings or curls
  • Fresh cherries (optional)

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract. Beat on medium speed until well combined.
    • Stir in the boiling water (the batter will be thin).
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Cool the cakes in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
  2. Make the Cherry Filling:
    • In a small saucepan, combine the cherry juice, cornstarch, and sugar (if using).
    • Cook over medium heat, stirring constantly until thickened.
    • Stir in the pitted cherries and cook for another 2 minutes. Remove from heat and let it cool completely.
  3. Prepare the Whipped Cream:
    • In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the Cake:
    • Level the tops of the cooled cakes if necessary.
    • Place one cake layer on a serving plate. Spread a layer of whipped cream over the top, followed by a layer of cherry filling.
    • Place the second cake layer on top. Cover the entire cake with the remaining whipped cream.
    • Decorate with chocolate shavings or curls and fresh cherries, if desired.
  5. Chill and Serve:
    • Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld and the cake to set.
