Ingredients

  • For the Chicken:
  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the Sauce:
  • 1/4 cup bourbon
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • For the Broccoli:
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional Garnishes:
  • Sliced green onions
  • Sesame seeds

Instructions

  1. Prepare the Chicken:
  2. Season the chicken pieces with salt and pepper.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  5. Prepare the Sauce:
  6. In a small bowl, whisk together the bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes (if using).
  7. In a separate small bowl, mix the cornstarch and water to create a slurry.
  8. Cook the Sauce:
  9. In the same skillet used to cook the chicken, pour in the sauce mixture.
  10. Bring the sauce to a simmer over medium heat, stirring occasionally.
  11. Once the sauce begins to simmer, add the cornstarch slurry and stir well to combine.
  12. Continue to simmer the sauce until it thickens, about 2-3 minutes.
  13. Combine Chicken and Sauce:
  14. Return the cooked chicken to the skillet, stirring to coat the chicken pieces evenly with the sauce.
  15. Reduce the heat to low and let the chicken simmer in the sauce for a few minutes to absorb the flavors.
  16. Prepare the Broccoli:
  17. While the chicken is simmering, heat 1 tablespoon of olive oil in a separate skillet over medium heat.
  18. Add the broccoli florets and season with salt and pepper.
  19. Sauté the broccoli until it is tender-crisp, about 4-5 minutes.
  20. Serve:
  21. Serve the bourbon chicken over steamed rice or noodles.
  22. Arrange the sautéed broccoli on the side.
  23. Garnish with sliced green onions and sesame seeds, if desired.
