Braised Chicken Thighs with Mushrooms Recipe

A succulent dish featuring tender chicken thighs braised to perfection with earthy mushrooms in a savory sauce.


  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (such as cremini or button mushrooms)
  • 1 cup (240ml) chicken broth
  • 1/2 cup (120ml) dry white wine
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 tablespoons butter
  • Chopped fresh parsley for garnish (optional)


  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken thighs generously with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes. Flip and brown the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another 1 minute.
  5. Add sliced mushrooms to the skillet and cook until they release their moisture and begin to brown, about 5 minutes.
  6. Pour in chicken broth and white wine, scraping up any browned bits from the bottom of the skillet.
  7. Return the chicken thighs to the skillet, nestling them among the mushrooms. Add fresh thyme sprigs and a bay leaf.
  8. Cover the skillet and transfer it to the preheated oven. Braise for 25-30 minutes or until the chicken is cooked through and tender.
  9. Remove the skillet from the oven and place it back on the stovetop. Remove the chicken thighs and set them aside.
  10. Stir butter into the mushroom sauce until melted and well combined, creating a rich and creamy texture.
  11. Serve the braised chicken thighs with the mushroom sauce spooned over the top. Garnish with chopped fresh parsley if desired. Enjoy!
