Georgian Khachapuri Bread Roll Recipe

Khachapuri is a traditional Georgian dish that consists of a bread roll filled with cheese. It is a popular comfort food in Georgia, often enjoyed as a snack or a meal.



  • 2 ½ cups all-purpose flour
  • 1 cup warm water
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp dry yeast
  • 2 tbsp olive oil


  • 2 cups shredded mozzarella cheese (or a mix of mozzarella and feta for a more traditional taste)
  • 1 cup crumbled feta cheese
  • 1 egg (optional, for the filling)
  • 1 egg yolk (for brushing)
  • 1 tbsp butter (melted, for brushing)


  1. Prepare the Dough:
  2. In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 10 minutes until it becomes frothy.
  3. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  4. Mix until a dough forms. Turn the dough onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

  8. Assemble the Khachapuri:

  11. Roll each part into a ball, then flatten it into a circle about ¼ inch thick on a floured surface.

  13. Fold the edges of the dough over the filling, pinching the seams to seal and form a closed roll.
  14. Place the rolls on a baking sheet lined with parchment paper.
