Buffalo Chicken Mac and Cheese

Spice up your dinner routine with this delicious twist on classic mac and cheese. Creamy, cheesy pasta meets zesty buffalo chicken for a flavor explosion that will satisfy your cravings every time.


  • 8 oz elbow macaroni
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled blue cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)


  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden brown, stirring constantly.
  4. Gradually whisk in the milk until smooth and thickened, about 3-4 minutes.
  5. Stir in the shredded cheddar cheese until melted and smooth.
  6. Add the buffalo sauce to the cheese sauce and mix well.
  7. Fold in the cooked shredded chicken and cooked macaroni until evenly coated.
  8. Pour the mixture into the prepared baking dish and sprinkle the crumbled blue cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  10. Remove from the oven and let it cool for a few minutes before serving.
  11. Garnish with chopped green onions if desired, and enjoy your spicy buffalo chicken mac and cheese!

Note: Feel free to adjust the amount of buffalo sauce according to your spice preference. You can also add breadcrumbs on top for extra crunchiness.
