Butter Buttermilk Biscuits Recipe

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold
  • 1 tablespoon melted butter (for brushing tops)


  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
  3. Cut in the butter: Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.

  6. Fold the dough: Fold the rectangle into thirds, like a letter. Turn the dough 90 degrees and pat it out again into a 1-inch thick rectangle. Repeat the folding process once more. This folding helps create flaky layers in the biscuits.
  7. Cut the biscuits: Pat the dough out into a final 1-inch thick rectangle. Use a biscuit cutter or a round glass (floured) to cut out biscuits. Place the biscuits on the prepared baking sheet, close together for soft sides or apart for crispier sides.
  8. Bake: Brush the tops of the biscuits with melted butter. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
  9. Cool and serve: Remove the biscuits from the oven and let them cool slightly on a wire rack. Serve warm with butter, honey, or your favorite jam.
