  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup ripe mango puree
  • 1/2 cup butterscotch chips
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs to the butter-sugar mixture one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, alternating with the milk. Mix until well combined and smooth.
  6. Gently fold in the mango puree and butterscotch chips until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan, spreading it out evenly.
  8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled, you can optionally dust the top of the cake with powdered sugar or decorate it with whipped cream and fresh mango slices for an extra touch of elegance.
  11. Slice, serve, and enjoy the luscious flavors of this Butterscotch Mango Delight Cake with friends and family!
