Cabbage Soup Recipe

A hearty and healthy cabbage soup that’s perfect for a warming meal. This soup is full of vegetables and can be easily customized with your favorite ingredients.


  • 1 medium head of cabbage, chopped
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 1 teaspoon smoked paprika
  • Optional: 1 bay leaf
  • Optional: 1 cup cooked beans (e.g., kidney beans, cannellini beans)
  • Optional: 1 cup cooked brown rice or quinoa


  1. Prepare the Vegetables:
  • Chop the cabbage, dice the onion, and mince the garlic.
  • Slice the carrots and celery, and dice the bell pepper.
  1. Sauté the Aromatics:
  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  1. Add the Vegetables:
  • Add the sliced carrots, celery, and bell pepper to the pot.
  • Sauté for about 5 minutes until they start to soften.
  1. Incorporate the Cabbage:
  • Stir in the chopped cabbage and cook for another 5 minutes, allowing it to wilt slightly.
