Ingredients

  • 1 medium head of cabbage, chopped
  • 2 tablespoons olive oil

  • 1 can (14.5 oz) diced tomatoes

  • Optional: 1 teaspoon smoked paprika
  • Optional: 1 bay leaf
  • Optional: 1 cup cooked beans (e.g., kidney beans, cannellini beans)

Instructions

  1. Prepare the Vegetables:
  • Chop the cabbage, dice the onion, and mince the garlic.
  • Slice the carrots and celery, and dice the bell pepper.
  1. Sauté the Aromatics:
  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  1. Add the Vegetables:
  • Add the sliced carrots, celery, and bell pepper to the pot.
  • Sauté for about 5 minutes until they start to soften.
