Carrot Cake Roll Recipe

  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin

  1. Preheat your oven to 375°F (190°C). Grease and flour a 15x10x1-inch baking sheet, then line it with parchment paper. Leave a slight overhang on the longer sides for easier removal later.
  2. In a large bowl, beat the eggs on high speed for about 3 minutes until thickened. Gradually add in the granulated sugar, beating until the mixture is light and fluffy.
  3. Stir in the canned pumpkin and lemon juice until well combined.
  4. In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  12. Carefully re-roll the cake, this time without the towel. Wrap it tightly in plastic wrap and refrigerate for at least 1 hour before slicing.
