  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2/3 cup grated carrots
  • 1 cup chopped pecans (optional)
  • Confectioners’ sugar, for dusting

Cream Cheese Filling:

  • 1 (8-ounce) package cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract

  1. Preheat your oven to 375°F (190°C). Grease and line a 15×10-inch jelly-roll pan with parchment paper.
  2. In a large bowl, beat eggs on high speed for 5 minutes until thickened. Gradually beat in granulated sugar.
  3. In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Fold the dry ingredients into the egg mixture until well combined.
  4. Stir in grated carrots and pecans until evenly distributed.
  5. Spread the batter evenly into the prepared pan. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  6. Meanwhile, prepare a clean kitchen towel by sprinkling it generously with confectioners’ sugar.
  7. When the cake is done, immediately turn it out onto the prepared towel. Gently peel off the parchment paper.
  8. Starting with a short side, roll up the cake in the towel. Cool completely on a wire rack.
  9. While the cake is cooling, prepare the cream cheese filling. In a mixing bowl, beat cream cheese, butter, confectioners’ sugar, and vanilla extract until smooth and creamy.
  10. Carefully unroll the cooled cake and spread the cream cheese filling evenly over the surface.
  11. Roll up the cake again, without the towel, and place seam side down on a serving platter.
  12. Dust with additional confectioners’ sugar if desired. Refrigerate for at least 1 hour before slicing. Enjoy your delicious Carrot Cake Roll with Cream Cheese!
