Cheesy Beef Mexican Rice Recipe

A flavorful and hearty one-pan dish combining seasoned ground beef, vibrant vegetables, and Mexican rice, all topped with melted cheese. Perfect for a quick weeknight dinner that’s sure to satisfy the whole family.


  • 1 lb ground beef
  • 1 cup uncooked long-grain rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning mix
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (optional, for garnish)


  1. In a large skillet or pan, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper to the pan. Sauté for 3-4 minutes until softened.
  3. Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the taco seasoning, garlic powder, cumin, salt, and pepper. Mix until the beef is evenly coated with the spices.
  5. Add the uncooked rice to the pan, stirring to combine with the beef mixture.
  6. Pour in the beef broth, diced tomatoes with green chilies, corn, and black beans. Stir well to combine.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Once the rice is tender, sprinkle the shredded cheddar cheese over the top. Cover the pan again for 2-3 minutes, or until the cheese is melted.
  9. Remove from heat and garnish with fresh cilantro if desired.
