Indulge in a savory delight with this Cheesy Garlic Butter Mushroom Stuffed Chicken. Tender chicken breasts are filled with a creamy mixture of garlic-infused mushrooms and gooey cheese, creating a mouthwatering dish that’s sure to impress.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups sliced mushrooms
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 4 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and minced garlic. Sauté until the mushrooms are golden brown and the garlic is fragrant, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  3. Lay the chicken breasts flat on a cutting board. Using a sharp knife, slice a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the sautéed mushroom mixture, dividing it evenly among them. Then, stuff each breast with shredded mozzarella cheese.
  5. In the same skillet used for the mushrooms, melt the butter over medium heat. Once melted, sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  6. Transfer the seared chicken breasts to a baking dish. Sprinkle grated Parmesan cheese over the tops of each breast.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Once done, garnish with fresh chopped parsley before serving.
  9. Serve hot, and enjoy the flavorful combination of cheesy, garlicky goodness!
