Cheesy Mexican Casserole Recipe

Spice up your dinner with this delicious and easy-to-make Mexican casserole! Packed with flavor and topped with gooey cheese, it’s sure to be a hit with the whole family.


  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 packet (1 ounce) taco seasoning
  • 1 cup cooked rice
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sliced jalapeños, diced avocado, sour cream, chopped cilantro


  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add diced onion and bell pepper, and cook until softened.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Let the mixture simmer for 5-7 minutes.
  4. Spread half of the cooked rice evenly on the bottom of the prepared baking dish.
  5. Spoon half of the beef and vegetable mixture over the rice layer, spreading it out evenly.
  6. Sprinkle half of the shredded cheese over the beef mixture.
  7. Repeat the layers with the remaining rice, beef mixture, and shredded cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and golden brown.
  10. Serve hot, topped with your favorite optional toppings, and enjoy your cheesy Mexican casserole!
