  • 4 large russet potatoes, thinly sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 cup breadcrumbs (optional for topping)

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or a similar-sized casserole dish.
  2. Prepare Potatoes: Peel and thinly slice the potatoes using a mandoline or a sharp knife to about 1/8 inch thick. Set aside.
