Chicago-style pizza is a deep-dish pizza known for its buttery, flaky crust, generous layers of cheese, and rich tomato sauce on top. This recipe will guide you through creating this iconic dish from scratch.

For the Dough:

  • 3 1/4 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1 1/4 cups warm water (about 110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup vegetable oil
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt

For the Filling:

  • 1 pound mozzarella cheese, sliced or shredded
  • 1 pound Italian sausage, removed from casing (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 cups sliced pepperoni (optional)
  • 1 green bell pepper, chopped (optional)
  • 1 small onion, chopped (optional)
  • 8 ounces mushrooms, sliced (optional)

For the Sauce:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar

Prepare the Dough:

  1. In a large mixing bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and let it sit for about 5-10 minutes, or until foamy.
  2. Add the vegetable oil, olive oil, and salt to the yeast mixture.
  3. In a separate bowl, mix the flour and cornmeal.
  4. Gradually add the flour mixture to the yeast mixture, stirring until a dough forms.
  5. Knead the dough on a lightly floured surface for about 5-7 minutes, or until smooth and elastic.
  6. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Prepare the Sauce:

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and cook for about 1 minute, or until fragrant.
  3. Stir in the crushed tomatoes, oregano, basil, salt, pepper, and sugar.
  4. Bring the sauce to a simmer and cook for about 20-25 minutes, stirring occasionally. Remove from heat and set aside.

Assemble the Pizza:

  1. Preheat your oven to 425°F (220°C).
  2. Punch down the risen dough and transfer it to a lightly floured surface. Roll it out into a large circle, about 12 inches in diameter.
  3. Grease a 12-inch deep-dish pizza pan or a cast-iron skillet with a little olive oil.
  4. Carefully transfer the dough to the prepared pan, pressing it into the bottom and up the sides of the pan.
  5. Layer the mozzarella cheese evenly over the dough.
  6. Add the Italian sausage, pepperoni, green bell pepper, onion, and mushrooms over the cheese layer (if using).
  7. Pour the prepared tomato sauce over the top of the filling, spreading it evenly.
  8. Sprinkle the grated Parmesan cheese over the sauce.

Bake the Pizza:

  1. Place the pizza in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the cheese is bubbly.
  2. Remove the pizza from the oven and let it cool for about 5-10 minutes before slicing and serving.
