Chicken and Dumplings Recipe

A comforting, classic dish perfect for cold weather. Tender chicken, fluffy dumplings, and hearty vegetables come together in a creamy broth to create a filling and satisfying meal.

Ingredients

For the Chicken and Broth:

  • 1 whole chicken (about 4 pounds), cut into pieces
  • 6 cups chicken broth
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/4 cup butter, melted

Instructions

  1. Prepare the Chicken and Broth:
  • In a large pot or Dutch oven, combine the chicken pieces, chicken broth, chopped onion, sliced carrots, sliced celery, minced garlic, bay leaves, dried thyme, salt, and pepper.
  • Bring to a boil, then reduce the heat and let it simmer for about 45 minutes to an hour, or until the chicken is fully cooked and tender.
  1. Shred the Chicken:
  • Remove the chicken pieces from the pot and let them cool slightly.
  • Discard the bay leaves.
  • Shred the chicken, discarding the skin and bones. Set the shredded chicken aside.
  1. Make the Dumplings:
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • Stir in the milk and melted butter until just combined. Do not overmix; the batter should be thick and lumpy.
  1. Cook the Dumplings:
  • Return the shredded chicken to the pot.
  • Bring the broth to a gentle boil.
  • Drop spoonfuls of the dumpling batter into the simmering broth. The dumplings will expand as they cook.
  • Cover the pot and reduce the heat to low. Let the dumplings simmer for about 15-20 minutes, or until they are cooked through and fluffy.
  1. Serve:
  • Ladle the chicken, vegetables, broth, and dumplings into bowls.
  • Enjoy your hearty chicken and dumplings!
