Chicken and Dumplings Recipe

Warm, comforting, and utterly satisfying, this classic chicken and dumplings recipe is a timeless favorite. Tender chunks of chicken nestled in a rich broth, with fluffy dumplings bobbing on top, make for a hearty meal that’s perfect for any occasion.

  • 1 whole chicken (about 4 pounds), cut into pieces
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish)

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 3/4 cup milk

  1. In a large pot or Dutch oven, combine the chicken pieces, carrots, celery, onion, garlic, chicken broth, bay leaves, salt, and pepper. Bring to a boil over medium-high heat.
  2. Reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  3. While the chicken is cooking, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.
  4. After the chicken is cooked, remove it from the pot and let it cool slightly. Once cool enough to handle, shred the chicken meat and discard the bones and skin. Return the shredded chicken to the pot.
  5. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until golden brown. Gradually whisk in the heavy cream until smooth and thickened, about 2-3 minutes. Pour this mixture into the pot with the chicken and vegetables, stirring well to combine.
  6. Drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
  7. Serve hot, garnished with chopped parsley. Enjoy the cozy goodness of homemade chicken and dumplings!
  8. Optional: You can add extra flavor to the broth by including herbs like thyme or rosemary, or by incorporating a splash of white wine during cooking. Adjust the seasoning according to your taste preferences.
