  • For the chicken:
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup Italian breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup vegetable oil (for frying)
  • For the sauce:
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • For assembling:
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves (for garnish)
  • Cooked pasta (spaghetti or your choice)

  1. Prepare the chicken:
  2. Preheat the oven to 400°F (200°C).
  3. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  4. Season both sides of the chicken breasts with salt and pepper.
  5. Set up the breading station:
  6. Place the flour in a shallow dish.
  7. In another shallow dish, whisk together the eggs and milk.
  8. In a third shallow dish, combine the Italian breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, and dried basil.
  9. Bread the chicken:
  10. Dredge each chicken breast in the flour, shaking off any excess.
  11. Dip the chicken into the egg mixture, ensuring it’s fully coated.
  12. Press the chicken into the breadcrumb mixture, making sure it’s evenly coated on both sides. Set the breaded chicken aside.
  13. Cook the chicken:
  14. In a large skillet, heat the vegetable oil over medium-high heat.
  15. Once the oil is hot, add the breaded chicken breasts. Cook for 3-4 minutes on each side until golden brown and crispy. Transfer the cooked chicken to a paper towel-lined plate to drain any excess oil.
  16. Prepare the sauce:
  17. In a small saucepan, heat the olive oil over medium heat.
  18. Add the minced garlic and cook until fragrant, about 1 minute.
  19. Stir in the marinara sauce and red pepper flakes (if using). Season with salt and pepper to taste. Let the sauce simmer for about 5 minutes.
  20. Assemble the dish:
  21. In a baking dish, spread a thin layer of marinara sauce on the bottom.
  22. Place the cooked chicken breasts on top of the sauce.
  23. Spoon more marinara sauce over each chicken breast.
  24. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the chicken.
  25. Bake:
  26. Transfer the baking dish to the preheated oven.
  27. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
  28. Serve:
  29. Garnish the chicken Parmesan with fresh basil leaves.
  30. Serve the chicken over cooked pasta with extra marinara sauce on the side.
