Chicken Sorrentino Recipe

Chicken Sorrentino is a delicious Italian-American dish featuring breaded chicken cutlets topped with prosciutto, eggplant, and mozzarella cheese, all bathed in a rich tomato sauce. This recipe offers a flavorful twist on the classic chicken parmigiana.


  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 4 slices prosciutto
  • 1 small eggplant, thinly sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 cups marinara sauce
  • Olive oil, for frying
  • Fresh basil leaves, for garnish (optional)


  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick. Season both sides of the chicken with salt and pepper.
  3. Set up a breading station with three shallow dishes: one containing flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
  4. Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  5. In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan. Fry the breaded chicken breasts for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and drain on paper towels.
  6. In the same skillet, add a little more olive oil if needed, then add the thinly sliced eggplant. Cook until the eggplant is tender and golden brown, about 2-3 minutes per side. Remove from the skillet and set aside.
  7. Place the fried chicken breasts in a baking dish. Top each breast with a slice of prosciutto, followed by a few slices of cooked eggplant, and finally, slices of fresh mozzarella cheese.
  8. Pour the marinara sauce over the chicken and cheese, spreading it evenly.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
