Chicken Thighs with Potatoes Recipe

A delicious and hearty meal perfect for any occasion, combining tender chicken thighs with flavorful potatoes.


  • 4 bone-in, skin-on chicken thighs
  • 4 medium potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs generously with salt, pepper, paprika, and dried thyme on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken thighs to the skillet, skin side down, and cook for 5-6 minutes until the skin is golden brown and crispy.
  5. Flip the chicken thighs and add minced garlic to the skillet, cooking for an additional 1-2 minutes until fragrant.
  6. Remove the chicken thighs from the skillet and set aside.
  7. In the same skillet, add the potato chunks and toss them in the remaining oil and juices from the chicken. Season with salt and pepper to taste.
  8. Place the chicken thighs back on top of the potatoes in the skillet.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  10. Once done, remove from the oven and let it rest for a few minutes.
  11. Garnish with fresh parsley if desired, then serve hot and enjoy!
