  • 1 cup (240 ml) boiling water
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) sour cream or Greek yogurt
  • 1 cup (175 g) chocolate chips or chunks (optional)

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the boiling water and cocoa powder until smooth. Let it cool to room temperature.
  3. In another bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, alternating with the cocoa mixture, beginning and ending with the flour mixture. Mix until just combined.
  7. Fold in the sour cream or Greek yogurt until the batter is smooth. If using, fold in the chocolate chips or chunks.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  11. Slice and serve. Enjoy!
