  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cream Filling:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 1/2 cups (190g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream


  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the Chocolate Wafers:
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, beating until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  1. Bake the Wafers:
  • Roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each ball slightly with the bottom of a glass or your fingers.
  • Bake for 8-10 minutes, or until the edges are set. The centers may still look slightly soft.
  • Allow the wafers to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • In a large bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, beating until smooth and fluffy.
  • Add the vanilla extract and heavy cream, beating until well combined and the filling is light and creamy.

  • Once the wafers are completely cooled, spread or pipe a generous amount of cream filling onto the flat side of one wafer.
  • Top with another wafer, pressing gently to spread the filling to the edges.
