Classic Potato Pancakes Recipe

These classic potato pancakes, also known as latkes, are crispy on the outside and tender on the inside. They make a perfect side dish or appetizer and are a beloved favorite for any meal.

  • 4 large potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

  1. Place the grated potatoes in a cheesecloth or a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a large bowl, combine the grated potatoes, grated onion, beaten eggs, flour, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Drop heaping tablespoons of the potato mixture into the hot oil, flattening each mound slightly with the back of the spoon.
  5. Fry the pancakes until they are golden brown and crispy, about 3-4 minutes per side.
  6. Transfer the pancakes to a paper towel-lined plate to drain excess oil.
  7. Serve hot with applesauce or sour cream. Enjoy!

These potato pancakes are perfect for breakfast, brunch, or as a delicious snack.
