Classic Potato Salad Recipe

Ingredients:

  • 2 pounds (about 900g) potatoes, peeled and diced
  • 3/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Boil the diced potatoes in a large pot of salted water until tender but still firm, about 10-15 minutes. Drain and let cool.
