Classic Potato Salad Recipe

A timeless potato salad recipe that’s perfect for picnics, barbecues, or as a side dish for any occasion.


  • 2 pounds (about 900g) potatoes, peeled and diced
  • 3/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish


  1. Boil the diced potatoes in a large pot of salted water until tender but still firm, about 10-15 minutes. Drain and let cool.
  2. In a small bowl, mix together the mayonnaise, Dijon mustard, and apple cider vinegar until well combined.
  3. In a large mixing bowl, combine the cooked potatoes, chopped celery, chopped red onion, and chopped hard-boiled eggs.
  4. Pour the mayonnaise mixture over the potato mixture and gently toss until everything is evenly coated.
  5. Season with salt and pepper to taste.
