  • 1 9-inch pie crust (store-bought or homemade)
  • 5 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • Whipped cream or vanilla ice cream (optional, for serving)

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust into a 9-inch pie dish, crimping the edges as desired. Prick the bottom and sides of the crust with a fork to prevent air bubbles while baking.
  3. In a medium saucepan, combine the sugar and cornstarch. Gradually stir in the water until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. Boil the sugar mixture for 2 minutes, continuing to stir constantly. Remove from heat and stir in the lemon juice. Allow the mixture to cool slightly.
  5. Arrange the sliced strawberries in the prepared pie crust.
  6. Pour the sugar mixture over the strawberries, making sure to coat them evenly.
  7. Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Remove the pie from the oven and let it cool completely before serving.
  9. Serve slices of the pie with whipped cream or vanilla ice cream if desired. Enjoy the taste of summer with every bite!

Note: You can refrigerate any leftovers, but the pie is best enjoyed fresh on the day it’s made.
