  • 2 cups cooked corned beef, diced
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 eggs
  • Chopped fresh parsley for garnish (optional)

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, sauté until onions are translucent and fragrant, about 3-4 minutes.
  2. Add diced potatoes to the skillet. Cook, stirring occasionally, until potatoes are golden brown and tender, about 10-12 minutes.
  3. Once potatoes are cooked, add diced corned beef to the skillet. Stir well to combine all ingredients. Season with salt and pepper to taste.
  4. Create four wells in the hash mixture using a spoon. Crack an egg into each well.
  5. Cover the skillet and cook until the eggs are set to your desired doneness, about 5-7 minutes for medium-cooked eggs.
  6. Once eggs are cooked, remove the skillet from heat. Sprinkle chopped fresh parsley over the hash for added freshness and color, if desired.
  7. Serve hot, spooning portions of the hash onto plates with one egg on top of each serving. Enjoy your delicious homemade corned beef hash and eggs!
