Cowboy Meatloaf and Potato Casserole


For the Meatloaf:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 cup shredded cheddar cheese

For the Potato Topping:

  • 3 cups mashed potatoes (prepared from about 2 lbs potatoes)
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup bacon bits (optional)
  • 2 tbsp chopped green onions or chives
  • Salt and pepper to taste


  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare the Meatloaf:
  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, diced onion, minced garlic, Worcestershire sauce, salt, pepper, smoked paprika, dried oregano, and shredded cheddar cheese. Mix until well combined.
  • Press the meatloaf mixture evenly into the bottom of a greased 9×13-inch baking dish.
  1. Bake the Meatloaf:
  • Bake the meatloaf in the preheated oven for 20 minutes.

  • After the meatloaf has baked for 20 minutes, remove it from the oven. Spread the mashed potato mixture evenly over the top of the meatloaf.

  • Return the casserole to the oven and bake for an additional 15-20 minutes, or until the potatoes are golden brown and the meatloaf is cooked through.
