This delightful pie combines the tropical sweetness of pineapple with the creamy goodness of a classic dessert. It’s perfect for any occasion, from family gatherings to dinner parties. Follow these simple instructions to create a mouthwatering treat that will have everyone asking for seconds.

  • 1 pre-made pie crust (or homemade, if preferred)
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 tablespoon gelatin powder
  • 2 tablespoons cold water
  • Maraschino cherries for garnish (optional)

  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made pie crust into a 9-inch pie dish. Press it firmly against the bottom and sides, trimming any excess dough if necessary. Prick the bottom of the crust with a fork to prevent air bubbles from forming.
  3. Bake the pie crust in the preheated oven for 10-12 minutes, or until lightly golden brown. Remove from the oven and let it cool completely on a wire rack.
  4. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for 5 minutes to soften.
  5. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  6. Add the powdered sugar and vanilla extract to the cream cheese, and continue beating until well combined and fluffy.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until smooth and uniform.
  9. In a saucepan, heat the softened gelatin mixture over low heat, stirring continuously until the gelatin is completely dissolved. Remove from heat and let it cool slightly.
  10. Gradually add the dissolved gelatin to the cream cheese mixture, stirring gently until fully incorporated.
  11. Fold in the drained crushed pineapple until evenly distributed throughout the mixture.
  12. Pour the creamy pineapple filling into the cooled pie crust, spreading it out evenly.
  13. Refrigerate the pie for at least 4 hours, or until set.
  14. Once set, garnish with maraschino cherries if desired.
  15. Slice and serve chilled. Enjoy your creamy pineapple pie!
