Learn how to make perfectly crispy French fries at home with this simple recipe. These golden, crunchy fries are the perfect side dish or snack, and they taste even better than the ones from your favorite fast-food restaurant.

  • 4 large russet potatoes
  • Vegetable oil, for frying
  • Salt, to taste

  1. Prepare the Potatoes:
    • Wash and peel the potatoes.
    • Cut the potatoes into thin strips, about 1/4 inch thick.
  2. Soak the Potatoes:
    • Place the cut potatoes in a large bowl and cover them with cold water.
    • Let them soak for at least 30 minutes, or up to 2 hours. This helps remove excess starch, resulting in crispier fries.
  3. Preheat the Oil:
    • In a deep fryer or a large pot, heat vegetable oil to 325°F (165°C).
  4. First Fry:
    • Drain the potatoes and pat them dry with paper towels to remove excess moisture.
    • Fry the potatoes in batches for about 3-4 minutes until they are pale and slightly tender but not browned.
    • Remove the potatoes with a slotted spoon and let them drain on a paper towel-lined baking sheet.
  5. Increase the Oil Temperature:
    • Heat the oil to 375°F (190°C).
  6. Second Fry:
    • Fry the potatoes again in batches for another 2-3 minutes, or until they are golden brown and crispy.
    • Remove the fries with a slotted spoon and drain on fresh paper towels.
  7. Season and Serve:
    • Immediately sprinkle the hot fries with salt to taste.
    • Serve them hot with your favorite dipping sauces.
