Csebureki is a delicious traditional dish originating from the Caucasus region, particularly popular in countries like Georgia and Russia. It’s a savory pastry filled with a tasty meat mixture and typically fried until golden brown. Follow this recipe to create your own mouthwatering csebureki at home!

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 2 tablespoons vegetable oil

For the Filling:

  • 1 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the warm water and vegetable oil.
    • Mix the ingredients together until a dough forms. If the dough is too dry, add a little more water, or if it’s too sticky, add a little more flour.
    • Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic. Then, cover the dough with a kitchen towel and let it rest for 30 minutes.
  2. Prepare the Filling:
    • In a skillet, heat some oil over medium heat. Add the chopped onion and cook until soft and translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Add the ground beef or lamb to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through.
    • Stir in the ground coriander, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes to let the flavors meld together. Remove from heat and let the filling cool slightly.
  3. Assemble the Csebureki:
    • Divide the dough into small balls, about the size of a golf ball. Roll each ball out into a thin circle, about 1/8 inch thick.
    • Place a spoonful of the meat filling in the center of each dough circle.
    • Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, using a fork to crimp the edges.
  4. Fry the Csebureki:
    • Heat vegetable oil in a deep skillet or frying pan over medium-high heat.
    • Carefully place the filled csebureki in the hot oil, a few at a time, making sure not to overcrowd the pan.
    • Fry until golden brown and crispy on both sides, about 3-4 minutes per side.
    • Once cooked, remove the csebureki from the oil and drain on paper towels to remove excess oil.
  5. Serve and Enjoy:
    • Serve the csebureki hot with your favorite dipping sauce or yogurt on the side. Enjoy the delicious flavors of this classic Caucasus dish!

Note: You can also bake the csebureki in the oven at 375°F (190°C) for about 20-25 minutes until golden brown if you prefer a healthier option.
