For the Cake:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

For the Custard Layer:

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter

Optional Toppings:

  • Powdered sugar for dusting
  • Fresh berries or fruit slices
  • Whipped cream

  1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C).
  • Grease and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  1. Make the Cake Batter:
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly.
  1. Bake the Cake:
  • Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  1. Prepare the Custard Layer:
  • In a medium saucepan, heat the milk over medium heat until it begins to steam, but do not let it boil.
  • In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth and pale in color.
  • Gradually pour the hot milk into the egg yolk mixture, whisking constantly to temper the eggs.
  • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
  • Remove from heat and stir in the vanilla extract and butter until fully melted and incorporated.
  1. Assemble the Cake:
  • Once the cake is completely cooled, pour the warm custard over the top, spreading it evenly.
  • Allow the custard to set by chilling the cake in the refrigerator for at least 2 hours.
  1. Serve:
  • Dust the top of the custard cake with powdered sugar, if desired.
  • Slice and serve with fresh berries, fruit slices, or a dollop of whipped cream.

Enjoy your delicious custard cake!
