Custard Filled Pastries Recipe

Delight in the rich, creamy flavor of custard filled pastries with this simple recipe. These pastries are perfect for breakfast, dessert, or a special treat, combining a flaky exterior with a luscious custard filling.

  • For the pastry:
  • 1 package puff pastry sheets (2 sheets), thawed
  • 1 egg (for egg wash)
  • 1 tablespoon water
  • For the custard filling:
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter

  1. Prepare the custard filling:
  2. In a medium saucepan, heat the milk over medium heat until it begins to steam, but do not let it boil.
  3. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
  4. Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and begins to boil.
  6. Remove from heat and stir in the vanilla extract and butter until smooth.
  7. Pour the custard into a bowl, cover with plastic wrap (pressing the wrap directly onto the surface to prevent a skin from forming), and refrigerate until completely cool.
  8. Prepare the pastries:
  9. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  10. Roll out the puff pastry sheets on a lightly floured surface to smooth out any creases.
  11. Cut each pastry sheet into 6 equal rectangles (12 total).
  12. Place a spoonful of the cooled custard filling in the center of each rectangle.
  13. Fold the pastry over the filling to form a square or triangle, pressing the edges together to seal. Use a fork to crimp the edges.
  14. In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the pastries with the egg wash.
  15. Bake the pastries:
  16. Place the pastries on the prepared baking sheet, leaving some space between each one.
  17. Bake in the preheated oven for 15-20 minutes, or until the pastries are golden brown and puffed.
  18. Remove from the oven and let the pastries cool slightly on a wire rack before serving.

Enjoy your homemade custard filled pastries warm or at room temperature, with a dusting of powdered sugar if desired.
