Decadent Chocolate Truffle Cake

  • 200g dark chocolate (70% cocoa or higher), chopped
  • 200g unsalted butter, diced
  • 200g granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 100g all-purpose flour
  • 1/2 teaspoon salt
  • Cocoa powder for dusting


  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a heatproof bowl, combine the chopped dark chocolate and diced butter. Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn’t touch the water. Stir occasionally until the chocolate and butter are melted and smooth. Remove from heat and let it cool slightly.
  3. In a separate bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and well incorporated.
  5. Sift in the all-purpose flour and salt into the chocolate mixture. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread it evenly with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is set and a toothpick inserted into the center comes out with moist crumbs, but not wet batter.
  8. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, run a knife around the edges of the cake to loosen it from the pan. Invert the cake onto a wire rack and peel off the parchment paper. Let the cake cool completely.
  9. Once cooled, dust the top of the cake with cocoa powder for a finishing touch.
