Glazed Lemon Cake

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1/4 cup freshly squeezed lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk

For the Lemon Syrup:

  • 1/4 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed lemon juice

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or a bundt pan.
  1. Prepare the Cake Batter:
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract, lemon zest, and lemon juice.
  1. Combine Dry Ingredients:
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  1. Mix Wet and Dry Ingredients:
  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  1. Bake the Cake:
  • Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  1. Prepare the Lemon Syrup:
  • In a small saucepan, combine the granulated sugar and lemon juice over medium heat. Stir until the sugar has dissolved.
  • While the cake is still warm, poke holes all over the top with a skewer or toothpick. Slowly pour the lemon syrup over the cake, allowing it to soak in.
  1. Make the Lemon Glaze:
  • In a small bowl, whisk together the powdered sugar and enough lemon juice to make a thick but pourable glaze.
  1. Glaze the Cake:
  • Once the cake is completely cool, drizzle the lemon glaze over the top, letting it drip down the sides.
  1. Serve:
  • Allow the glaze to set for about 20 minutes before slicing. Enjoy your Glazed Lemon Cake!

This lemon cake is perfect for any occasion with its bright, citrusy flavor and sweet glaze. Enjoy baking and savoring each bite!
