Easy Stuffed Pepper Casserole Recipe

A hearty twist on classic stuffed peppers, this casserole is a satisfying weeknight meal that brings all the flavors together in one dish.


  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced (any color)
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat. Add diced onions and garlic, cooking until onions are translucent.
  3. Stir in diced bell peppers and cook until they start to soften, about 5 minutes.
  4. Add cooked rice, diced tomatoes (with juices), Italian seasoning, salt, and pepper. Mix well and let it simmer for another 5 minutes.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Sprinkle shredded cheddar cheese over the top.
  7. Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
